Place the egg yolks in a saucepan, bring to a warm bath or simmering heat
Mix the egg yolks quickly until they have a creamy consistency
Remove from the heat
Beat for another minute
Add the melted butter or margarine gradually
The temperature of the egg yolks and butter should be the same
Beat continuously
Do not use the residue at the bottom of the butter
Add the lemon juice
Taste and adjust seasoning as needed
