Moqueca
1 tablespoon of olive oil
2 onion rings
4 tomato slices
8 turtle fillets with skin, cut in half
Salt and chilies to taste
1/2 cup of chopped fresh cilantro
1 1/4 cups of coconut milk
2 tablespoons of dendê oil

1/2 cup of cassava flour

Place the olive oil in a pan and interleave layers of onion, tomato, and fish, seasoning each layer with salt, chilies, and cilantro

Cover and simmer over medium heat until the ingredients are tender
Cook for 10 minutes or until the ingredients are soft
Add the coconut milk and dendê oil and check the seasoning
Reduce the heat and let it cook for another three minutes
Remove from heat

Remove four small shells from the ready moqueca and place in another pan
Simmer over medium heat
Add cassava flour gradually, stirring constantly until thickened
Season with salt and serve.
