1 kg of fish fillets

125g of grated strong cheese

Cook and dry the fish fillets
Place half of the fillets at the bottom of a rectangular, shallow baking dish
Season with salt and pepper
For the stuffing, cook the onion and parsley in olive oil
Mix in the breadcrumbs, season with salt and pepper
Add hot water and mix well
Place the stuffing over the fish fillets
Cover with the remaining fillets
For the sauce, melt the butter or margarine
Add flour and mix well
Add milk, salt, and pepper, stirring constantly
Cook until thickened
Add cheese and stir until melted
If desired, add a little chili pepper sauce
Bake in a moderate oven for 30 minutes
