Begin by carefully cutting off the top of the pumpkin, like a lid
Remove the seeds

Preheat the oven to high heat
Line a large baking dish with
aluminum foil, leaving enough overhang to wrap around the pumpkin
Break the rapadura into pieces and place them inside the pumpkin
Soak with Porto wine, put the lid back on and wrap in aluminum foil
Bake for one hour or until the flesh is tender
Serve in spoonfuls.
