1 envelope of unflavored, unsweetened gelatin (12 g)
1 tablespoon of instant coffee
1/4 cup of cold water (60 ml)
1/2 cup of hot water (120 ml)
1/4 cup of granulated sugar (45 g)
1/2 teaspoon of vanilla extract
2 eggs
1 1/4 cups of finely chopped ice cream
1 cup of heavy cream (240 ml)

In a blender, combine the gelatin, coffee, cold water, and hot water
Blend until all ingredients are well mixed (approximately 40 seconds)
Add the sugar and vanilla extract and blend until the mixture is smooth (approximately 10 seconds)
Combine the eggs, chopped ice cream, and heavy cream
Blend until the mixture starts to thicken (approximately 20 seconds)
Distribute the mousse among four serving cups and refrigerate for 10 minutes
