For the dough
2 eggs
240 ml of fresh sparkling water
2 tablespoons (scoop) of melted butter
180 g of all-purpose flour
1 tablespoon of salt
1/2 teaspoon of black pepper
2 tablespoons of crumbled Gorgonzola cheese
1 tablespoon of chopped fresh thyme
For greasing
Butter to taste

Step 1
In a bowl, whisk together the egg, sparkling water, melted butter, flour, salt, and black pepper until a homogeneous dough forms
Add the cheese and thyme, and mix well until both ingredients are fully incorporated into the dough
Step 2
Cover the bowl and refrigerate the dough for about six hours
Grease muffin tin shapes and divide the dough evenly among them
Bake in a medium/high oven, preheated, for 18 minutes
Unmold and serve.
