Season the abalone slices with salt, black pepper, and olive oil

Cook the slices on a hot skillet for 5 seconds each side

Brown the green onion cubes with olive oil and garlic for half a minute
Add spinach, season with salt and black pepper, and cook for an additional half minute

Place a spoonful of the filling in the center of each abalone slice and fold it in half
Arrange on a heatproof dish greased with olive oil, topped with gorgonzola cheese cubes, and serve immediately.
