In a small saucepan, bring the lime juice and sugar to a simmer over low heat for about 6 minutes or until a syrup-like consistency is reached
Melt the gelatin in the remaining water in a small bowl
Combine the melted gelatin with the pineapple juice mixture and whisk until dissolved
Pour the mixture into a small bowl and let it cool to room temperature
Once cooled, stir in the diced pineapple
Pour the mixture into individual serving cups or a large serving dish
Chill in the refrigerator for at least 4 hours or until firm
Serve chilled.
