Melt the chocolate in a double boiler, warm the heavy cream and mix with the chocolate
Add the ginger, cinnamon, and allspice, mix well and place in a flat container
Refrigerate until firm
Shape the truffles, coat in confectioners' sugar and refrigerate until serving time
Serve dusted with cocoa powder.
