Juice of 1/2 lemon
1 cup of fresh pineapple pureed or grated
3 eggs
1/2 cup of sugar
1/2 teaspoon of salt
1 1/2 tablespoons of unflavored gelatin
1/2 cup of cold milk
1 cup of whipped heavy cream
2 tablespoons of liqueur
1/2 pound of strawberries washed and hulled
sugar

Add the lemon juice to the pineapple
Beat the eggs with the sugar and salt until thickened
Add the pineapple and mix well
Place in a water bath and cook, stirring until thickened
Do not overcook
Dissolve the gelatin in hot pineapple mixture and then cool
Chill in the refrigerator until slightly set
Fold in the whipped heavy cream and liqueur
Serve in individual cups and garnish with strawberries
Let sit for 4 hours.
