In a saucepan, combine the pineapple, sugar, and mint leaves
Let it cook for 15 minutes
Remove the mint leaves, add the gelatin, mix well, and remove from heat
Let it cool and mix in the whipped cream
Beat the egg whites until fluffy and fold them into the mixture gently
Distribute into individual servings and refrigerate to set.
