2 cups of chicken broth (480 ml)
1 large onion, cut into pieces
1 medium carrot, peeled and sliced
2 medium tomatoes, peeled and chopped
2 lime wedges
2 tablespoons of fresh parsley, chopped, or 1 tablespoon of dried parsley
1 kg of crab meat, whole
2 envelopes of unsweetened gelatin

In a medium saucepan, bring the chicken broth to a boil with the onion, carrot, tomato, lime wedges, and parsley
Reduce heat and simmer for 15 minutes
While that's cooking, clean and remove the shells from the crab
Add the crab to the boiling liquid and cook for 4 minutes or until firm
Remove the lime and turn off the heat
Dissolve the gelatin in 1/2 cup of cold water and add it to the hot broth
Stir until dissolved
Bate the mixture with the vegetables and crab in a blender
Check the seasoning and add salt, black pepper, and lime juice as needed
Pour into a large bowl and refrigerate for a few minutes
If desired, place the bowl over ice water to thicken slightly
Bate the heavy cream in an electric mixer until thick and fluffy
If using canned cream, drain the serum and use the cream without bating
Add the crab mixture and mayonnaise to the whipped cream
Mix well
Pour into a decorative mold lightly greased with oil
Refrigerate for 4 hours or until firm
Demold and garnish with cooked crab claws and lime wedges
