To make the mousse: soak the gelatin in water
Brew it over heat to dissolve
Pour into a blender with the peaches, lemon juice, and sugar
Blend well
Pour into a 18 cm diameter mold that has been moistened with water
Refrigerate until firm
To make the sauce: blend the peaches in a blender
Add the grated lemon zest
Refrigerate until serving time
Serve with the mousse.
