Mash the black beans and reserve
Hydrate the gelatin in a little water and melt it in a bain-marie. Reserve
In a saucepan, combine the mashed black beans, sugar, and lemon zest and let it simmer
Remove from heat, add the orange juice pulp, heavy cream, and melted gelatin
Blend well, pour into cups, and refrigerate until chilled.
