In a small heatproof bowl set over a pot of simmering water, melt the chocolate, stirring occasionally with a spatula
Keep the mixture at a boil, stirring constantly, until it reaches a thick syrup consistency (test by drizzling a little of the mixture into a cup; if it forms a thick thread, it's ready)
In a mixer bowl, beat the melted chocolate, gradually adding the syrup and whisking continuously
Add the yolks one at a time, beating without stopping
Add the rum. Reserve
In another mixer bowl, beat the whites until stiff peaks form
Fold in the chocolate mixture gently with a spatula
Transfer to a large serving dish or eight individual cups and cover with plastic wrap
Refrigerate for at least 4 hours before serving to allow it to set
