1 large melon (700 g)
1 medium cucumber (430 g)
1/2 cup mayonnaise
4 tablespoons lemon juice
2 tablespoons vinegar
1 teaspoon salt
2 cups cooked chicken breast, finely chopped
2 envelopes unsweetened gelatin
1/2 cup cold water
1/2 cup whipped cream or 1 cup heavy cream
1 large melon (700 g)

Cut the melon in half, remove the seeds and rind
Roughly grate the melon pulp to obtain 1 1/2 cups of grated melon
Reserve the liquid
Strain the liquid and add water if necessary to make 1 cup
Cut the cucumber in half lengthwise
Remove the seeds, but do not peel
Roughly grate the cucumber to obtain 1 cup
Mix the mayonnaise, lemon juice, vinegar, and salt
Add the melon, cucumber, and chicken to the mixture
Soak the gelatin in cold water
Add the melon juice to the mixture and stir well
Heat over low heat, stirring constantly until the gelatin dissolves
Add the mixture to a chilled bowl and refrigerate until it thickens slightly
Add the whipped cream or heavy cream and pour into an annular mold greased with oil
Refrigerate until firm
Unmold and, if desired, fill the center with melon cubes and cucumber slices
Decorate with lettuce, if desired
Serve in 12 portions.
