Puree the guava without skin to form a smooth mixture
Strain and remove seeds
Transfer to a saucepan and add sugar
Cook over low heat, stirring constantly, until sugar is completely dissolved
Let cool
Beat the whipped cream into stiff peaks and reserve
Hydrate the gelatin according to manufacturer's instructions and mix with the cooled guava mixture
Mix well and add whipped cream
Fold from bottom to top. Reserve
Beat egg whites until fluffy and fold into whipped cream mixture
Mix gently until a smooth, homogeneous foam forms
Distribute in cups and refrigerate until firm.
