8 egg yolks

Place the sugar and water in a saucepan and cook over high heat, stirring with a wooden spoon until the sugar dissolves
No stir required; let the syrup reach the soft-ball stage (see left)
Let it cool down
While this is happening, whisk together the egg yolks in a bowl
Add them to the syrup

Bring the mixture back to a boil, stirring constantly, until you get a smooth and thick consistency
Pour into a serving dish, let it cool, and serve.
