2 tablespoons of unflavored gelatin, white

2 cups of cold heavy cream or 1 can of sweetened condensed milk, chilled

2 large (80g each) tablets of unsweetened dark chocolate

Soak the gelatin in 1/3 cup of cold water for a few minutes
Then, heat it to dissolve
Add the peppermint extract to the gelatin and let it cool
Combine 1 cup of whipped heavy cream with the beaten egg whites
Mix delicately
Grease a round baking dish and pour in the mixture
Refrigerate
To make the topping, melt the chocolate in a double boiler and mix with the remaining 1/2 cup of whipped heavy cream
Refrigerate until firm
Assemble by placing the mousse on top of the chocolate glaze and refrigerate until serving
Note: You can also find peppermint extract as 'mint creme'
This mousse is very refreshing for an elegant dinner; the flavor reminds one of a famous English chocolate called After Eight, often served with coffee.
