Separate 2 tablespoons of diced ham
Pulse the remaining ham in a food processor with the butter or margarine, white sauce, and salt and pepper to a fine consistency
Heat the mixture over low heat, stirring constantly, until it forms a well-bound paste
Add the diced ham, season with salt and pepper to taste, and add the chilled cream
Mix well and pour into a greased mold coated with oil
Cover and refrigerate
To remove from the mold, pass outside this one wet cloth in water, and turn over a nice plate, garnishing with lettuce and thin tomato slices
Serves 6 people as a cold starter.
