1 1/2 cups cooked rice
2 cups grated cheese, cut into small squares
1 egg white, beaten
1 1/2 tablespoons mustard
2 tablespoons chopped fresh parsley
1/4 teaspoon paprika
Oil for frying
1/4 cup all-purpose flour
1 tablespoon granulated sugar
1 1/2 cups cooked rice

In a bowl, mix together the rice, egg white, and seasonings with a fork
Mold into small balls, about 2.5 cm in diameter, placing a piece of cheese in the center of each ball
Closes well
Dip into the flour mixed with sugar
Refrigerate for at least 1 hour
In a hot skillet, fry the fritters until they are golden brown
Note: Can be served as a side dish to meats or poultry, or as an appetizer.
