In a small saucepan, mix the chocolate with the water
Heat over low heat, stirring constantly until the chocolate melts and the mixture is smooth
Add 1/4 cup of sugar and whisk well until it dissolves
Beat the egg yolks in a bowl and slowly add to the chocolate mixture, beating well
Add the vanilla extract
Let it cool
Beat the egg whites in a separate bowl until stiff peaks form and add 1/4 cup of sugar, whisking until stiff
Beat the heavy cream until stiff peaks form
Combine the chocolate mixture with the meringue
Then, add the whipped cream and mix carefully until well combined
Pour into a mold that can be opened and cover
Refrigerate for 6 hours or until firm
When serving, run a knife around the mold and open it carefully
Place the mousse on a plate without removing the mold base
