Prepare the creamy gelatin layer
In a small saucepan, combine 1 1/2 tablespoons of unflavored gelatin, 1 tablespoon of granulated sugar, and 1/2 teaspoon of salt
Add 3/4 cup of water and stir until the gelatin has dissolved
Add 2 tablespoons of lemon juice and stir well
Pour into a shallow mold with a hole in the center
Refrigerate until the mixture is set but still slightly jiggly
Cut 1/2 cucumber into thin slices and place them overlapping on top of the gelatin layer
Refrigerate until the mousse is almost set
In a small saucepan, combine 1 tablespoon of unflavored gelatin, salt, and sugar
Add water and stir over low heat until the gelatin has dissolved
Add lemon juice and stir well
Pour the hot gelatin mixture into the cheese pieces in a blender and blend until smooth
Cut the cucumbers in half and remove the seeds
Finely chop one of them
Mix the chopped onion with the remaining ingredients and pour over the mousse in the mold
Refrigerate until set
To serve, unmold and garnish with small tomatoes and orogano leaves if desired.
