1/2 small cucumber, peeled and finely chopped (75g)
3 small radishes, peeled and finely chopped (65g)
1 teaspoon salt
a pinch of black pepper
4 large and ripe nectarines, seeded and cut in half (720g)

Rinse the wheat flour well, drain and place it in a medium bowl with water
Cover and let it hydrate for 30 minutes
In another medium bowl, mix together parsley, dill, lemon juice, and olive oil until homogeneous
Add the cucumber, radish, salt, and black pepper
Mix well
Strain the wheat flour through a fine-mesh sieve, pressing gently to remove excess liquid
Combine with the herb mixture
Fill each nectarine half with this mixture, filling the fruit cavity to form a mound
Serve immediately
