For the sauce
3 egg yolks
1/4 cup granulated sugar
1 1/2 cups hot milk
1/2 teaspoon vanilla extract
For the strawberry snow
2 tablespoons unsalted gelatin
1/2 cup granulated sugar
1 tablespoon freshly squeezed lime juice
400 grams fresh strawberries
3 egg whites
For the sauce

1/4 cup granulated sugar
1 1/2 cups hot milk
1/2 teaspoon vanilla extract
For the strawberry snow
2 tablespoons unsalted gelatin
1/2 cup granulated sugar
1 tablespoon freshly squeezed lime juice
400 grams fresh strawberries
3 egg whites
Mix the egg yolks with the sugar
Add the hot milk to the mixture, whisking constantly
Place over low heat and cook, stirring occasionally, until thickened slightly
Let cool and add the vanilla extract
Reserve in the refrigerator
Prepare the strawberry snow: mix the gelatin with 1/4 cup cold water
Heat over low heat until dissolved
Add to a blender with 1/4 cup granulated sugar, lime juice, and strawberries
Blend well, until smooth
Pour into a bowl
Place over a basin of ice and water and stir until thickened
Beat the egg whites until soft peaks form
Add the remaining granulated sugar and beat until stiff peaks form
Fold the mixture with strawberries and stir carefully
Pour into a 22cm diameter mold, greased with milk
Refrigerate until firm
Unmold and serve with sauce
