1 tablespoon of unsweetened gelatin
2 cups of cooked mango puree (mangoes sweetened with sugar and passed through a sieve)
1 tablespoon of grated lime zest
3 tablespoons of lime juice
2 tablespoons of sugar substitute
1/2 tablespoon of ground cinnamon
1/2 tablespoon of nutmeg
2 egg whites

Sprinkle the gelatin over 1/2 cup of cold water in a small bowl to soften it
Mix the mango puree with lime zest, juice, sugar substitute, and spices in a saucepan; let it come to a boil, stirring constantly
Add the softened gelatin, stirring until dissolved
Pour into a bowl; refrigerate for 1 hour
Meanwhile, whip the egg whites to stiff peaks
Gently fold the whipped egg whites into the mango mixture
Refrigerate until chilled.
