Boil the potatoes until they're soft
Peel and mash, let it rest in the refrigerator for a day or two
Add the eggs, salt, and mix well
Place on a floured surface, make a hole in the middle, and add 1 cup of all-purpose flour to the center
Knead everything together very well, adding more flour if the dough sticks to your hands
The dough should be soft and smooth
Form into rolls over a lightly floured surface
Cut each one into pieces about 2 cm long
Press your finger in the center of each piece and cook them in boiling water
Reduce heat and cook for 3 to 5 minutes or until they rise to the surface
Remove and serve with grated cheese and melted butter.
