3 tablespoons of rasped table cheese

3/4 cup of beer or milk
1 lightly beaten egg yolk

Melt the cheese and butter in a bain-marie, add half of the beer or milk when the cheese is partially melted and cook, stirring constantly
Mix the remaining beer or milk with the egg yolk and add it slowly to the cheese; stir constantly until the mixture becomes smooth and thick
Serve over toasted bread
Dust with parsley
