Preheat the oven to medium heat (180°C)
Grease 4 individual molds with butter or margarine
In a pan, mix well the butter and flour
Heat it up and add the milk gradually, stirring constantly until slightly thickened
Set aside
In a blender, beat the egg yolks until thickened and pale in color
Add them to the reserved white sauce
Season to taste, add the chopped parsley, whipped egg whites, and mix carefully
Proceed similarly with the grated cheese
Pour into the prepared molds and bake in a water bath at 180°C for 50 minutes or until firm
Unmold and serve chilled or at room temperature.
