Mix the grated coconut and cornstarch in a small saucepan
Add the orange juice and grated zest
Cook over medium heat, stirring constantly, until the mixture is thick and translucent
Let it cool
If using fresh heavy cream, whip until stiffened (or use canned heavy cream)
Mix with the orange sauce
In a serving dish, arrange papaya and melon slices and drizzle with the sauce
Serve chilled.
