2 tablespoons of oil
1 small onion, finely chopped
1/2 green pepper, chopped
4 cups cooked rice
Salt and pepper to taste
Chopped tomato sauce to taste
2 tomatoes, sliced
150g ham, sliced
150g mozzarella cheese, sliced
4 eggs
1 cup milk
4 tablespoons grated cheese
Oregano to taste

Heat the oil in a pan, caramelize the onion and sauté the green pepper
Add the rice, salt, pepper, and tomato sauce
Turn off the heat
Preheat the oven to 200°C
In a greased baking dish, place half of the rice
Top with a layer of tomatoes, ham, and mozzarella cheese
Cover with the remaining rice
Blend the eggs, milk, and grated cheese in a blender
Pour over the rice, sprinkle oregano, and bake for 45 minutes or until golden brown
Serve hot.
