In a skillet, melt the butter or margarine and sauté the onion until it starts to brown
Add the potatoes and fry for about 2 minutes
In a bowl, beat the eggs with a fork and season with salt, black pepper, and oregano
Pour the mixture over the potatoes
Mix gently so that the egg settles at the bottom of the pan, allowing the bottom to brown
Let the fritada slide onto a plate and flip it again in the skillet
Transfer to a plate and serve immediately.
