Mix the eggs lightly with a fork
Add the salt
Heat a non-stick skillet approximately 20 cm in diameter over high heat
Add the butter and let it melt, without letting it brown
Immediately pour in the eggs and stir vigorously with a fork, agitating the pan constantly
When you pass a fork to the bottom and the mark is left, the omelet is firm
This takes about 1 minute, give or take
Remove from heat
If the omelet will be served with filling, place it in the middle of the omelet
Cautiously lift the handle of the skillet and let the omelet slide to the other side of the skillet
Fold the edge closest to the handle over the filling using a spatula or fork
Let it slide onto a plate or serving dish
This serves 1 person.
