In a non-stick skillet, heat the oil and fry the cooked rice until it's golden brown
Remove with a spatula and place on a plate covered with paper towel
With a fork, loosen any clumps that form
In a bowl, beat the eggs, add the fried rice, grated Parmesan cheese, cubed mozzarella cheese, salt, and chopped parsley
Grease a medium non-stick skillet with a little butter, place the omelette over low heat, and let it brown on both sides
Serve immediately.
