Pulse the prosciutto and mix with the mustard, green onions, and cheese, also diced
Beat the eggs for an omelette and pour over hot butter in a skillet
Cook the omelette as usual, not leaving it dry
Place the filling of prosciutto, cheese, and green onion inside the omelette and roll carefully
Finish cooking, allowing the cheese to melt.
