2 tablespoons of olive oil
1 small onion, finely chopped
1/2 green pepper, finely chopped
4 cups cooked rice
Salt and pepper to taste
Chopped fresh parsley to taste
2 tomatoes, cut into slices
150g ham, sliced
150g mozzarella cheese, sliced
4 eggs
1 cup milk
4 tablespoons grated cheddar cheese
Parsley to taste

Heat the olive oil, sauté the onion and green pepper
Add the rice, salt, pepper, and chopped parsley
Remove from heat
Preheat the oven to 400°F (200°C)
Place half of the rice in a baking dish
Distribute layers of tomato slices, ham, mozzarella cheese, and remaining rice
Cover with the rest of the rice
In a blender, beat the eggs, milk, and grated cheddar cheese
Pour over the prepared mixture, sprinkle parsley, and bake for 45 minutes or until golden brown.
