100g clarified butter
50ml milk
125ml cold water
2 tablespoons sesame seed oil

Mix together the two flours with a pinch of salt
Make a hole in the center and pour in the milk and water
Knead the mixture until it becomes soft and let it rest for 20 minutes, covered with a clean cloth
Knead for another 10 minutes, incorporating the clarified butter and sesame seeds gradually
Divide the dough into 12 balls
On a floured surface, roll out each ball into disks of 20cm in diameter
Spread butter on the disks and fold them in half
Apply more butter and fold them in four quarters
Open up the dough again, forming disks
Fry the parathas in a buttered pan with melted butter and serve with raita.
