In a bowl, whisk together the milk, flour, salt, and egg yolks until smooth
Beat the egg whites until stiff peaks form, then fold them into the previous mixture and mix carefully
If desired, add the cream
Heat a 10-inch skillet with butter until it melts
Pour in the mixture in two portions and sprinkle with raisins
Cook over low heat until the bottom is lightly browned, without drying too much
Flip and cook the other side
Using two forks, tear the omelette into small pieces
Repeat with the remaining egg mixture
Place on a platter and serve dusted with powdered sugar, as a dessert
