Grease a baking dish, arrange the bread slices, and reserve
In a blender, beat the eggs with 2/3 of the milk and pour over the bread
Sprinkle the grated coconut on top and bake in a preheated moderate oven (180°C) until golden brown
Meanwhile, bring a pan to a boil with the remaining milk, orange zest, and let it simmer
Turn off the heat and mix in the self-raising flour
Once the bread pudding is baked, remove it from the oven and moisten it with the milk syrup
Dust with cinnamon to taste and serve warm or cold.
