Mix the eggs, sesame oil, grated ginger, and salt with 1 soup spoon of water in a medium bowl until well combined
Let it rest to allow the foam to disappear
Grease a non-stick skillet of 8.5 inches diameter lightly with vegetable oil
When the skillet is hot, pour in 1/4 of the egg mixture and rotate it gently to spread it evenly
Cook for about 2 minutes over medium heat until the edges start to set
Remove from heat and let rest for 1 minute
Invert and cook over medium heat for 30 seconds to dry the other side
Repeat to make more 3 omelettes.
