Make the filling: quickly sauté the peach in melted butter with sugar until it's soft
Add the cream and reserve warm
Beat the egg yolks with cream and sugar, then set aside. Reserve
Beat the whites until stiff and fold them into the egg yolks
Melt the butter in a skillet and pour in the eggs
Cook until the bottom is golden brown and the surface is dry
Slide onto a plate and spread the peach filling over it
Fold in half and dust with confectioner's sugar
Serve immediately.
