Panquecas ingredients:
1/3 cup wheat flour
One egg
1/3 cup milk
1/2 tablespoon butter or margarine for greasing
To the filling:
1/2 cup mango puree
1 1/2 teaspoons ground cinnamon
2 tablespoons raisins
2 tablespoons butter or margarine
One tablespoon sugar

To make the pancakes, place the flour in a bowl
Make a hole in the middle and add the egg, gradually adding the milk - a little at a time - beating until you get a smooth batter
Let it rest for 15 minutes
Fry a non-stick skillet of about 18 cm in diameter and add 2 1/2 tablespoons of batter
Cook first on one side, then the other
Make 4 pancakes
To the filling, mix the mango puree with 1/2 teaspoon ground cinnamon and raisins
Spread over the pancakes
Fold the sides to the middle forming a "package"
Fry slowly in butter or margarine until they are golden on both sides
Serve hot, dusting with remaining sugar and cinnamon
Yield: 4 units.
