Cook the almonds and then grind them in a machine
Add 3 egg yolks, salt, pepper, and 40 grams of butter or margarine and mix until you get a smooth puree
Place it on an oiled plate to go into the oven
Break the 8 whole eggs on top
Beat the egg whites stiff with a little salt
Add the egg whites, 60 grams of butter or margarine beaten until creamy, and finally grated Gruyère cheese
Pour it over the eggs
Bake in a warm oven for 15 minutes.
