Preheat the oven
Scoop the grated cheese into a 20 cm diameter ceramic dish, leaving room around the edges
Break the eggs over the cheese, one in each corner
Sprinkle with salt and pepper
Soak the eggs with milk
Garnish with chopped spinach around the eggs
Bake in a moderate oven until the eggs are set
Serve in quarters.
