60g unsalted butter, softened
salt and pepper to taste

Wash the green onions thoroughly
Chop them finely, using all the white part and half of the green part
Peel and chop the hard-boiled eggs
Mix with the green onion and softened butter
Season with salt and pepper to taste
Refrigerate for 2 hours
Serve on lettuce leaves
Instead of butter, you can also use a little mustard-seasoned mayonnaise
Serves 4 to 6 people.
