1 slice of bread, crust removed
1 tablespoon butter
1 tablespoon chopped fresh parsley (optional)
Salt and black pepper to taste

Pass the garlic on both sides of the bread
Using a cup or circular cookie cutter, cut out a circle in the center of the slice and set aside
Melt the butter in a frying pan and toast the bread slice and egg yolk
Remove the bread from the frying pan and break the egg into the center of the bread
Cover the frying pan and when the egg is cooked to desired, sprinkle with salt, black pepper, and chopped parsley
Serve with the toasted bread as a lid on the sandwich.
