Heat the butter in a frying pan
Add the onion and fry until it starts to brown
Add the corn and season with salt to taste
Add the eggs and cook, stirring constantly, until they are set but not dry
Sprinkle with chopped parsley and serve immediately
Portion into 4 servings.
