Melt the butter in a 20cm non-stick skillet
In a medium-sized bowl, lightly beat the eggs with the heavy cream, salt, and black pepper
Add 1/2 cup of grated cheese and stir carefully
Pour into a preheated and greased skillet over medium heat and cook for 2 minutes, stirring carefully until the eggs are slightly firm but still moist
Sprinkle with the remaining cheese and cook until the eggs are firm
Garnish with chopped fresh herbs and bread cubes
Serve in 4 portions.
