Toast the bread slices and keep them warm
Butter or margarine each slice
Dissolve a small piece of butter or margarine in a saucepan, add the eggs and place it in a water bath
Stir constantly with a wooden spoon
When the eggs start to become consistent, gradually add the butter or margarine in small pieces, stirring always
When the eggs reach a creamy consistency, arrange them on top of the toasted bread slices
Place anchovy fillets on top, sprinkle with parsley, salt and pepper, to taste
Serve hot.
