Place the sugar in a saucepan and bring to medium heat
Stir occasionally until caramelized
Add the water, slowly, allowing it to flow off the edge of the pan and mix well to dissolve the sugar and form a thin syrup
Let it simmer for 3 minutes
Add the eggs without stirring until they start to set
Mix and cook for an additional 3 minutes until the eggs are cooked through and soaked in the syrup
Add the vanilla
Remove from heat and serve cold
